Prof. Moses Teye is an Associate Professor, and currently the Head of the Department of Animal Science, UCC. He was the coordinator of the Meat Processing Unit of the University of Cape Coast. Prof. Teye is a specialist in Meat Science and Technology, Animal Welfare and Food Safety. He has worked extensively in studies related to animal welfare and its effects on meat quality. He has been a member of a number of teams that trained butchers and livestock vendors across the country Ghana. He is currently conducting studies to evaluate the effects of unconventional feed ingredients in rabbit rations, on carcass and meat quality of breeds of rabbits in Ghana. In addition, he is conducting studies to unearth natural preservatives to be used as substitutes for chemical preservatives in meat products.
