Dr. Abednego Kofi Bansah is an instructional technologist and community nutritionist at Department of Hospitality and Tourism Management, University of Cape Coast. After completion of Undergraduate and Graduate Degrees in Home Economics and Human Resource Management at the University of Ghana and University of Cape Coast respectively, Dr. Bansah further obtained a Masters Degree in Food and Nutrition, and PhD in Instructional Technology from the Ohio University in the United States. His research interest is in affective design of instructional messages to build credibility in information for solving social challenges like food insecurity, malnutrition and obesity and the integration of technology through curriculum development for face-to-face and online learning.
